In this presentation we will discuss the application of Artificial Intelligence (AI) and system approach in food safety and give examples of AI models and workflows developed in food safety. These are being implemented in Wageningen Food Safety Research (WFSR), WFSR big data infrastructure, which automatically collects, processes and extracts knowledge from diverse data sources from all over the world. The main focus will be on the approach developed to find new and unknown stimulants in food supplements using AI. The new approach extracts potential stimulants using AI from two different data sources which are scientific literature and Media (e.g. articles, discussions on the worldwide web, blogs and social media). The result showed that the developed approach may be suitable to find “unknowns” in the emerging risk identification activities performed by the industry and the competent authorities.
